With the weather starting to cool down, I love to make warm soups and crockpot meals. Wanted to share with you guys my easy healthy vegetable soup recipe that you can make for your next dinner. This recipe is EVEN better the next day so it makes for perfect left overs. The measurements feed my husband and I for dinner and then each a bowl for lunch the next day!
Healthy Vegetable Fall Soup:
Ingredients:
1 Yellow Onion
2 Stalks Celery (diced)
2 Cloves of Garlic
1 Large Potato peeled and diced
2 Tomatoes diced
Bag of Frozen Veggies
4 Cups of Vegetable Broth
2 Cups of V-8 Juice
1/4 Cup of Olive Oil
Salt & Pepper
Directions:
In a large pot, add the olive oil, onions, celery, and garlic and sautè.
Add everything else including broth and juice and simmer for at least 30 mins (even better if longer).
Add a side of Texas toast or a french baguette too- delish! Bowls were a gift, find similar here.
