I know what you’re thinking….. This isn’t a typical post on my blog! In fact, I don’t think I’ve ever done a recipe/food post other than my grocery list/ things I eat post. As I’ve become extremely interested in a Paleo diet and different cool healthy recipes and gut health things, I’ve started wanting to share more ‘wellness’ on the blog. So here and there y’all may see a post surrounding the subject.
TODAY, I HAD to share my recipe for the best paleo coffee creamer I’ve been making lately. This stuff is delish. I’m definitely a coffee drinker and I usually buy a coconut creamer pre-made from the grocery store but about a month ago I started making my own and it’s even better. For those that are new here, I’m allergic to nuts…. so I can’t drink ANY almond milk, cashew milk, nut milk, etc. I love Fairlife which is a lactose free milk but I’ve tried to cut back my milk intake these last few months and just use coconut milk at least majority of the week.
I did some research on coconut creamer and saw a variety of posts on Pinterest about it. I tweaked to my own taste and this is what I came up with:
1 can of coconut milk or coconut cream
2 Tablespoons of coconut sugar
Cinnamon to taste
1 large tablespoon of maple syrup
1 tablespoon vanilla
I start with the can of coconut milk or cream. I originally made this best paleo coffee creamer recipe with with coconut milk to begin with and it was sooo good but very watery. I like a thick cream that I can froth up so I tried coconut cream and it was much better in my opinion but both are great depending on what you like. You pour into your blender, add the other ingredients and blend!! I pour into a glass milk bottle and store in my fridge. This is good up to 2 weeks!
You could tweak this yourself and sweeten with agave, or add nutmeg or anything else you’d rather have. SUPER easy to throw together and much better for you than all the added sugar that companies can throw in sometimes.
